Roasted Tomato
Goat Cheese Pesto Pizza

1/3 cup Offbeat Gourmet Premium Pesto

1 loaf French bread (not baguette)

1 pint grape or cherry tomatoes
-
1 tsp olive oil
-
2 oz Goat Cheese
-
2 tsp balsamic vinegar
Directions

Pre-heat your oven to 400 degrees
-
Cover baking sheet with foil and set aside
-
In a bowl, stir together the tomatoes and olive oil
-
Add tomatoes to the baking sheet and roast them in the oven, shaking the pan occasionally for 15-20 minutes or until the tomatoes are blistered

Remove the roasted tomatoes from the oven

Slice the French bread in half lengthwise

Spread Offbeat Gourmet Premium Pesto directly on the bread

Top the bread with the roasted tomatoes

Crumble the Goat Cheese on top of the roasted tomatoes and finish the french bread pizza off with a drizzle of balsamic vinegar
