Goat Cheese Pesto Pizza

Pantry

  • 1/3 cup Offbeat Gourmet Premium Pesto

  • 1 loaf French bread (not baguette)

  • 1 pint grape or cherry tomatoes

  • 1 tsp olive oil

  • 2 oz Goat Cheese

  • 2 tsp balsamic vinegar

Directions

  • Pre-heat your oven to 400 degrees

  • Cover baking sheet with foil and set aside

  • In a bowl, stir together the tomatoes and olive oil

  • Add tomatoes to the baking sheet and roast them in the oven, shaking the pan occasionally for 15-20 minutes or until the tomatoes are blistered

  • Remove the roasted tomatoes from the oven

  • Slice the French bread in half lengthwise

  • Spread Offbeat Gourmet Premium Pesto directly on the bread

  • Top the bread with the roasted tomatoes

  • Crumble the Goat Cheese on top of the roasted tomatoes and finish the french bread pizza off with a drizzle of balsamic vinegar
