Deviled Eggs

Serves: 8 people (2 per person)


  • Offbeat Gourmet Pickled Mustard Seeds

  • Offbeat Gourmet Spicy Dijon

  • Offbeat Gourmet Hot Sauce


  • 8 hard-boiled eggs

  • 1/2 cup mayonnaise

  • 1 TBS. fresh prepared horseradish

  • 2 TBS. Spicy Dijon

  • 1 tsp. fresh chopped parsley

  • 1 tsp. thinly sliced green onion/chives

  • 1/8 tsp. fine ground black pepper

  • 1/8 tsp. paprika

  • Couple dashes of Offbeat Gourmet Hot Sauce


  • Small dollop of Offbeat Gourmet Pickled Mustard Seeds

  • Light dusting of paprika. (we prefer smoked)



  1. Peel 8 hard boiled eggs and cut length wise.

  2. Place yolks in a zip-lock bag.  Squeeze out almost all of the air and massage yolks to a paste through the bag.

  3. In a medium bowl mix together all of your ingredients.  Then carefully work in your yolk paste and blend until creamy and smooth.  This will take some effort. Work it, it's worth it!

  4. Carefully spoon finished filling back into zip-lock bag.

  5. Cut corner of bag with scissors about 1/4" and squeeze to fill each deviled egg.

  6. Garnish with pickled mustard seeds & a light dusting of paprika
