Lemon, Prosciutto and Spinach Smothered Chicken
Serves a party of 4 to 6 people

4 Tbsp Offbeat Gourmet Meyer Lemon Marmalade

2-4 Tbsp olive oil
-
9 oz fresh spinach
-
4 oz prosciutto (torn into pieces)

2 shallots (or 1/2 medium onion)

2 cloves of garlic (minced)

Pinch of garlic powder

Salt and pepper

4 chicken breasts

4 Tbsp Feta cheese

Sprinkling of Romano cheese
Directions

Pre-heat your oven to 375 degrees

Then pound the chicken breasts, so they will cook evenly in your oven

Salt and pepper both sides of each chicken breasts and then add a small sprinkle of garlic to them

Grease a 9×13 baking dish with 1-2 Tbsp of olive oil. Place the chicken breasts into the baking sheet and BAKE for 20 minutes in your oven.

While the chicken is baking, add 1-2 Tbsp of olive oil to a large skillet over MEDIUM heat

Add your shallots (or onion) and garlic to the heated skillet. Set your timer for 1 minute.

Once your timer goes off, add the prosciutto and spinach to the skillet and cook the spinach mixture until the spinach is completely wilted

Remove the skillet from the heat

Once your chicken has baked for 20 minutes, remove the dish from the oven

Spread 1 Tbsp of Meyer Lemon Marmalade on each baked chicken breast

Spread spinach mixture evenly over each chicken breast covered with the Meyer Lemon Marmalade

Add 1 Tbsp of feta cheese and a sprinkle of Romano cheese to each chicken breast

Place the baking pan back into the oven and bake for an additional 20-25 minutes or until chicken is cooked throughout

Let rest 5 minutes before serving. Enjoy!
